Cooking Intructions
- Spiralize the zucchini into noodles using a spiralizer or julienne peeler. Set aside and lightly salt if you want to reduce moisture.2 cup Zucchini
- Heat a pan on medium (no oil needed for zero-fat). Add minced garlic and 1–2 tablespoons of water. Sauté for 1 minute until fragrant.2 cloves Garlic, 2 tbsp water
- Add lemon juice, lemon zest, and seasonings (salt, pepper, chili flakes). Stir and let it simmer for 1 more minute.2 tbsp Fresh lemon juice, 1/2 tbsp Lemon zest, 1/4 tbsp Salt, 1/4 tbsp Black pepper, 1/8 tbsp Red Chilli Flakes
- Add zucchini noodles to the pan. Toss for 2–3 minutes until just softened (don’t overcook—they should be slightly crunchy).
- Turn off the heat. Add chopped parsley and optional nutritional yeast for cheesy flavor.1 tbsp Fresh parsley, tbsp Olive oil
- Serve immediately, warm or room temp.
